For the Legends of Pizza Volume I<\/a><\/strong>,<\/a> I spoke with three noted pizza professionals.\u00a0 First, I interviewed Peter Reinhart<\/strong>, noted bread baker, teacher, and author of American Pie: My Search for the Perfect Pizza<\/a><\/em><\/strong>.\u00a0 Next I spoke with Gary Bimonte<\/strong>, grandson of Frank Pepe<\/strong> and co-owner of Frank Pepe\u0012s Pizzeria Napoletana<\/a>,<\/strong> New Haven, Connecticut<\/strong>.\u00a0 Finally, I called Chris Bianco<\/strong> who is a James Beard Award<\/strong> winner and the owner of Pizzeria Bianco<\/a><\/strong> located in Phoenix, Arizona<\/strong><\/p>\n

For Legends of Pizza Volume II<\/strong>, I interviewed three incredible pizzaiolo.<\/p>\n

\u00a0 First, I interviewed Brian Spangler<\/strong> of Apizza Scholls<\/a><\/strong> in Portland, Oregon. Brian is an up and coming legend of pizza<\/strong> who is gaining national notoriety with his artisan pizzas.<\/p>\n

Next, I spoke with seven time World Pizza Champion<\/a><\/strong> and Guinness Book<\/strong> of World Record holder Tony Gemignani<\/strong>.\u00a0 Tony is what I call the ambassador of pizza.\u00a0 In addition to owning Pyzano\u0012s Pizzeria<\/a><\/strong> in California, Tony is regularly on the road.\u00a0 He travels the globe giving pizza demonstrations.\u00a0 I was fortunate to be able to find him close to a phone.\u00a0 Tony wears many hats.\u00a0 His interview was insightful and revealing.<\/p>\n

Finally, I spoke to legendary pizzaiolo Ed LaDou <\/strong>of Caioti Pizza Cafe<\/a>.<\/strong>\u00a0 Ed has been making pizza for over thirty years.\u00a0 He is best known for being the creative genius behind all of Wolfgang Puck\u0012s<\/a><\/strong> pizzas as well as creating the pizza menu for
\nCalifornia Pizza Kitchen<\/a><\/strong>.<\/p>\n
